
Curry Shrimp Salad
1 - 6oz package curried rice mix2 cups cleaned, cooked shrimp, halved lengthwise
1 cup diced celery
1/2 cup diced green bell pepper
1/2 cup whipping cream
1/2 cup mayonnaise
1 tsp curry powder (or to taste)
Cook rice mix according to package directions; cool. Reserve 6 shrimp halves for garnish. In bowl, combine the remaining shrimp, the cooked rice, celery and pepper. Whip cream to soft peaks and combine with mayonnaise and curry. Stir into rice mixture. Cover; chill. To serve, line a bowl with lettuce leaves, spoon in mixture and sprinkle with a little paprika for color. Garnish with reserved shrimp.
You can garnish this salad like any other curry with shredded coconut, cashew nuts or chutney.
